    Best if made a couple of days ahead of time and stored in an airtight container at room temperature.

    Ingredients

    • 1 cup sugar
    • 1/2 cup unsalted butter melted
    • 3 tablespoons brandy
    • 2 teaspoons almond extract
    • 1 teaspoon vanilla extract
    • 1 cup almonds toasted and chopped
    • 3 large eggs
    • 2 3/4 cups all purpose flour
    • 1 1/2 teaspoons baking powder
    • 1/4 teaspoon salt

    Method

    1. Preheat oven to 350°F.
    2. Cream butter, sugar, brandy, and extracts.
    3. Mix in almonds and eggs.
    4. In separate bowl, mix together dry ingredients.
    5. Add dry ingredients to butter mixture and mix until just combined.
    6. Line baking sheets with parchment paper.
    7. Halve the dough.
    8. Form 2 16 by 2 inch loaves on baking sheets.
    9. Bake until golden, about 30 minutes.
    10. Remove from oven and cool on wire rack for 15 minutes.
    11. Cut loaves into 3/4 inch slices.
    12. Put slices back on baking sheet with a cut side down.
    13. Return slices to oven and bake 20 to 25 minutes longer.
    14. Remove from oven and cool on wire rack.

  • Ginger Snaps

    Ingredients

    • 3/4 cup butter
    • 1 cup brown sugar
    • 1 egg
    • 1/4 cup molasses
    • 2 3/4 cups all purpose flour
    • 4 1/8 teaspoons baking powder
    • 1 1/4 teaspoon salt
    • 1 teaspoon baking soda
    • 1 teaspoon cinnamon
    • 1 teaspoon ginger
    • 1/4 teaspoon cloves
    • white sugar

    Method

    1. Preheat oven to 375°F.
    2. Cream together butter and brown sugar.
    3. Beat in egg and molasses, mix until light and fluffy.
    4. Mix together dry ingredients.
    5. Add dry ingredients to butter mixture, mix until just blended.
    6. Line baking sheets with parchment paper.
    7. Shape dough into 3/4 inch balls.
    8. Roll balls in white sugar.
    9. Space balls 2 inches apart on baking sheets.
    10. Press balls down with bottom of a glass dipped in sugar.
    11. Bake 8-10 minutes.
    12. Remove from oven and cool on wire rack.

  • Russian Tea Cookies

    Ingredients

    • 1 cup butter softened
    • 1/2 cup icing sugar
    • 1 teaspoon vanilla
    • 2 1/4 cups all purpose flour
    • 1/4 teaspoon salt
    • 3/4 cup chopped walnuts

    Method

    1. Preheat oven to 400°F.
    2. Cream together butter, sugar, and vanilla.
    3. Add flour and salt, mix together.
    4. Stir in walnuts.
    5. Chill dough.
    6. Form dough into 1 tablespoon sized balls.
    7. Cover a baking sheet with parchment paper.
    8. Bake 8-10 minutes until set but not brown.
    9. While still mostly warm, roll the cookies in icing sugar.

  • Waffles

    Ingredients

    • 1 3/4 cups all purpose flour
    • 2 teaspoons baking powder
    • 1/2 teaspoon salt
    • 3 beaten egg yolks
    • 1 3/4 cup milk
    • 1/2 cup vegetable oil
    • 3 egg whites beaten to stiff peaks

    Method

    1. Mix together dry ingredients.
    2. Combine egg yolks and milk, add to dry ingredients.
    3. Add oil and mix.
    4. Gently fold in egg whites.
    5. Pour batter onto griddle and cook until golden brown.

  • Yorkshire Pudding

    Start this in the morning for a roast at supper time. The secrets to great yorkshire pudding are plenty of counter time, hot fat, and a hot pan.

    Ingredients

    • 3 eggs
    • 1 cup milk
    • 1 cup all purpose flour
    • 1/2 teaspoon salt

    Method

    1. Beat eggs for 5 minutes.
    2. Add milk and beat 5 more minutes.
    3. Add dry ingredients and beat 5 more minutes.
    4. Let sit on counter, beat for 5 minutes once an hour.
    5. Preheat oven to 425°F with pan in oven.
    6. Add hot fat to pan.
    7. Add batter to pan.
    8. Bake until browned, serve hot with gravy.
