  • Waffled Falafel

    Note: chickpeas need to soak for 24 hours before starting to cook and mixture requires refrigeration before cooking. 

    Ingredients

    • 2 cups dried chickpeas
    • 1/2 teaspoon baking soda
    • 1 cup fresh parsley leaves, stems removed
    • 3/4 cup fresh cilantro leaves, stems removed
    • 1/2 cup fresh dill, stems removed
    • 1 small onion, quartered
    • 8 garlic cloves, peeled
    • salt
    • 1 tablespoon ground black pepper
    • 1 tablespoon ground cumin
    • 1 tablespoon ground coriander
    • 1 teaspoon cayenne
    • 1 teaspoon baking powder
    • 2 tablespoons toasted sesame seeds

    Method

    1. Put the chickpeas and 1/2 teaspoon baking soda in a bowl and add water until 2 inches over the top of the chickpeas.
    2. Soak chickpeas for about 24 hours.
    3. Add chickpeas, herbs, onions, garlic, and spices to the bowl of a food processor fitted with a blade.
    4. Run the food processor 40 seconds at a time until ingredients are well combined.
    5. Put the mixture in a bowl, cover, and chill for at least 1 hour or up to 24 hours.
    6. Just before cooking, mix in baking powder and sesame seeds.
    7. Heat a waffle iron.
    8. Scoop mixture onto waffle iron (avoid crowding) and cook until brown and crispy on the outside (about 3-5 minutes).
    9. Serve hot.

            1. Brussel Sprout Fried Rice

               Ingredients

              • 1/2 cup vegetable oil
              • 1 bunch green onion
              • 6 ounces brussel sprouts, trimmed and thinly sliced
              • 3 cloves garlic, minced
              • 1 1-inch piece fresh ginger, grated
              • 2 large eggs
              • 2 cups cooked brown rice, cold
              • 2 teaspoons sesame oil
              • 1/4 cup soy sauce
              • 1 bunch cilantro, roughly chopped
              • 1/4 cup toasted sesame seeds

              Method

              1. Heat a large nonstick skillet over medium-high heat.
              2. Add 2 tablespoons vegetable oil and 1 teaspoon sesame oil.
              3. Reduce heat to medium.
              4. Add brussel sprouts and cook until tender and a touch crisp (about 6-8 minutes).
              5. Add garlic, ginger, and white parts of chopped green onion and cook until fragrant (about 30 seconds).
              6. Remove vegetables and set aside in a bowl.
              7. Clean out the skillet.
              8. Add 1/2 tablespoon more oil and swirl the pan.
              9. Add eggs and cook until scrambled.
              10. Remove eggs and set aside in vegetable bowl.
              11. Add remaining oil to skillet.
              12. Add rice, cooking for until heated and a bit crisp (about 3-4 minutes), stirring to break up any clumps.
              13. Reduce heat to medium-low.
              14. Add vegetables, eggs, and soy sauce to rice.
              15. Mix and cook until everything is hot.
              16. Serve and garnish with cilantro and sesame seeds.

                      1. Raisin Spice Cookies

                         Ingredients

                        • 1/2 cup unsalted butter
                        • 1/2 cup white sugar
                        • 1/2 cup brown sugar
                        • 1 egg
                        • 1 teaspoon vanilla extract
                        • 1 1/3 cups all-purpose flour
                        • 1/2 teaspoon salt
                        • 1/2 teaspoon baking soda
                        • 1 teaspoon cinnamon
                        • 1/4 teaspoon nutmeg
                        • 1/4 teaspoon cardamom
                        • 3/4 cup raisins.

                        Method

                        1. Preheat the oven to 350°F.
                        2. Line a cookie sheet with parchment paper,.
                        3. In the bowl of a stand mixer fitted with a paddle attachment cream together butter, white sugar, brown sugar, egg, and vanilla.
                        4. In a separate bowl, whisk together dry ingredients.
                        5. Add dry ingredients to the mixer bowl and stir until just combined.
                        6. Add raisins and stir until just combined.
                        7. Drop cookies onto cookie sheet.
                        8. Bake until done (about 10 minutes).
                        9. Cool on a wire rack.

                                1. Snickerdoodles

                                   Ingredients

                                  • 1/2 cup unsalted butter, softened
                                  • 1/2 cup vegetable shortening
                                  • 1 1/2 cups white sugar
                                  • 2 eggs
                                  • 2 teaspoons vanilla extract
                                  • 2 3/4 cups all-purpose flour
                                  • 2 teaspoons cream of tartar
                                  • 1 teaspoon baking soda
                                  • 1/4 teaspoon salt
                                  • 2 tablespoons white sugar
                                  • 2 teaspoons cinnamon

                                  Method

                                  1. Preheat the oven to 400°F.
                                  2. Line cookie sheets with parchment paper,.
                                  3. In the bowl of a stand mixer fitted with paddle attachment, cream together butter, shortening, 1 1/2 cups sugar, eggs, and vanilla.
                                  4. Blend in flour, cream of tartar, soda, and salt until just mixed.
                                  5. Using a scoop to form dough into balls.
                                  6. Mix together 2 tablespoons sugar and cinnamon.
                                  7. Roll dough balls in cinnamon sugar then place on cookie sheets about 2 inches apart.
                                  8. Bake until set but not too hard (about 8 to 10 minutes).
                                  9. Cool on wire racks.

                                          1. Basic Quiche

                                             Ingredients

                                            • 1/2 recipe pie crust, rolled out into a 9-inch pie plate
                                            • 4 eggs
                                            • 1/2 cup milk
                                            • 1/2 cup heavy cream
                                            • 1/4 teaspoon salt
                                            • 1/4 teaspoon pepper
                                            • 1 cup cheese, shredded or crumbled
                                            • 2 cups add-ins (vegetables, proteins, etc.)

                                            Method

                                            1. Preheat the oven to 375°F.
                                            2. Blind bake pie crust until edges are golden (about 15 minutes).
                                            3. Reduce oven temperature to 350°F.
                                            4. In a large bowl, beat together the eggs, milk, heavy cream, salt, and pepper with a hand mixer.
                                            5. Whisk in cheese and add-ins.
                                            6. Pour filling into crust.
                                            7. Bake until centre is set (about 55-60 minutes).
                                            8. Remove from oven and let cool slightly before serving.
