  • Beef Barley Soup

    Ingredients

    • 1 pound stew meat, trimmed of fat
    • 10 cups water
    • 1 tablespoon black pepper
    • 1 tablespoon seasoning salt
    • 1 tablespoon dried parsley
    • 1 teaspoon dried basil
    • 1 teaspoon garlic powder 
    • 1 (28 ounce) can crushed tomatoes
    • 3 carrots, diced
    • 3 stalks celery, diced
    • 1 onion, minced
    • 1 cup pearl barley (1/2 bag)

    Method

    1. Combine meat, water, herbs, and spices in a stock pot. 
    2. Boil over medium low heat for about 2 hours. 
    3. Remove meat from stock with a slotted spoon. 
    4. Finely dice meat. 
    5. Return meat to stock. 
    6. Add vegetables and barley. 
    7. Reduce heat and simmer (do not boil) until barley is cooked (about 1 1/2 hours).

  • Steak Salad with Mango

    Ingredients

    • 3/4 pound sirloin steak
    • salt
    • pepper
    • 1 head romaine lettuce
    • 1 mango, cut into thin strips
    • 1 red bell pepper, cut into thin strips
    • 1/2 cup fresh basil leaves, sliced
    • 2 scallions, thinly sliced
    • 1 teaspoon toasted sesame seeds

    Dressing

    • 1 teaspoon grated lime zest
    • 3 tablespoons lime juice
    • 1 tablespoon honey
    • 1 tablespoon pickled ginger, chopped
    • 2 teaspoons soy sauce
    • 3 tablespoons canola oil

    Method

    1. Season steak with salt and pepper and cook in a large cast iron skillet over high heat until medium rare (about 5 minutes a side).
    2. Whisk together dressing ingredients.
    3. Toss together prepared fruit and vegetables in a large bowl.
    4. Toss dressing into salad until lettuce is evenly coated.
    5. Cut steak into thin strips, then fold into salad.
    6. Sprinkle with sesame seeds.

  • Sweet and Sour Meatballs

    Ingredients

    Meatballs

    • 2 pounds hamburger
    • 2 eggs
    • 1 cup crushed corn flakes
    • 1 cup bread crumbs
    • 1/2 green pepper, finely diced
    • 1 1/2 teaspoons soya sauce
    • 1 teaspoon salt
    • 1 teaspoon nutmeg
    • 1 teaspoon garlic powder
    • 1/4 teaspoon pepper

    Sauce

    • 1/2 cup water
    • 1/2 cup soya sauce
    • 1 can pineapple chunks
    • 1/4 cup cider vinegar
    • 1/4 cup brown sugar
    • 2 tablespoons corn starch
    • 1/2 teaspoon ginger

    Method

    1. Mix together all meatball ingredients.
    2. Form meat into small balls.
    3. Heat up a frying pan with a small amount of oil.
    4. Brown balls until cooked through.
    5. Combine all sauce ingredients in a saucepan.
    6. Heat up sauce over medium heat until sugar and corn starch are dissolved.
    7. Pour sauce over meatballs and serve.

  • Lasagna

    Ingredients

    Filling

    • 1 1/2 pounds lean ground beef
    • 2 white onions chopped fine
    • 1/2 head garlic chopped fine
    • 1/2 tablespoon dried basil
    • 1/2 tablespoon dried oregano
    • 1 (16 ounce) can crushed tomatoes
    • 1/4 cup balsamic vinegar
    • salt
    • pepper

    Cheese Sauce

    • 4 tablespoons butter
    • 3 tablespoons flour
    • 3/4 cup parmesan cheese grated
    • salt
    • 2 cups milk
    • 2 egg yolks

    Noodles

    • 8 lasagne noodles cooked al dente

    Vegetarian Option

    • In the filling, replace the ground beef with:
      • 1 (18-ounce) can lentils, rinsed and drained
      • 2 pounds fresh mushrooms, finely diced
    • Brown the mushrooms before adding the lentils, then follow rest of directions.

    Method

    Meat Sauce

    1. In a large skillet brown the ground beef over medium heat.
    2. Add onions, garlic, and spices to beef and continue cooking until onions start to turn clear.
    3. Add tomatoes and vinegar, reduce heat and simmer until ready to use.

    Cheese Sauce

    1. Melt butter.
    2. Add flour to butter.
    3. Mix cheese and salt into the butter mixture.
    4. Stir in milk and cook over medium heat until thick.
    5. Add in egg yolks and cook just a couple of minutes longer.
    6. Remove from heat.

    Lasagne

    1. Preheat oven to 325°F.
    2. Layer: noodles, meat, cheese, noodles, meat, cheese.
    3. Bake for 20 minutes.
    4. Broil for 10 minutes or until cheese is brown and bubbling.
    5. Remove from oven and serve while hot.
