  • Sugar Cut-out Cookies with Citrus

     Ingredients

    • 1 cup butter
    • 1 cup white sugar
    • 1 egg
    • 2 teaspoons citrus zest (lemon or orange)
    • 1 teaspoon vanilla extract
    • 1 teaspoon baking powder
    • 1/2 teaspoon salt
    • 3 cups all-purpose flour

    Method

    1. Preheat oven to 350°F.
    2. Cream together the butter, brown sugar, and white sugar.
    3. Beat in the eggs, citrus zest, and vanilla.
    4. In a separate bowl, mix the flour, baking powder, and salt.
    5. Add the flour to the butter mixture and mix until just blended.
    6. Line baking sheets with parchment paper.
    7. Roll out dough to 1/4 inch think and use a cookie cutter.
    8. Place cut cookies on baking sheets.
    9. Bake until done (about 10 minutes).
    10. Remove from oven and cool on wire rack.

  • Pumpkin Spice Sugar Cookies

     Ingredients

    • 3/4 cup unsalted butter, softened
    • 1 cup white sugar
    • 1 cup brown sugar
    • 2 eggs
    • 1/2 cup roast pumpkin purée
    • 1 teaspoon vanilla extract
    • 1 tablespoon cinnamon
    • 1/2 teaspoon cardamom
    • 1/2 teaspoon cloves
    • 1 teaspoon baking powder
    • 1/2 teaspoon salt
    • 5 cups all-purpose flour.

    Method

    1. Preheat oven to 400°F.
    2. Cream together the butter, brown sugar, and white sugar.
    3. Beat in the eggs and vanilla.
    4. In a separate bowl, mix the flour, baking soda, spices, and salt.
    5. Add the flour to the butter mixture and mix until just blended.
    6. Line baking sheets with parchment paper.
    7. Roll out the dough to 1/8 inch thick, cut out using cookie cutters.
    8. Place cut cookies on baking sheets.
    9. Bake until done (about 8-10 minutes).
    10. Remove from oven and cool on wire rack.

    • 1/2 cup vegetable shortening
    • 2 cups brown sugar
    • 2 eggs
    • 1/4 cup milk
    • 1 teaspoon vanilla extract
    • 4 cups all-purpose flour
    • 1 1/2 teaspoons baking powder
    • 1/2 teaspoon baking soda
    • 1/4 teaspoon salt
    • 1 cup sweetened shredded coconut

    Method

    1. Preheat the oven to 400°F.
    2. Line a cookie sheet with parchment paper,.
    3. In the bowl of a stand mixer fitted with a paddle attachment cream together butter, shortening, and sugar.
    4. Beat in eggs, milk, and vanilla.
    5. In a separate bowl, whisk together dry ingredients.

    7. Drop cookies onto cookie sheet and flatten with a floured fork.

                        Method

                        1. Preheat the oven to 400°F.
                        2. Line cookie sheets with parchment paper,.
