  • Christmas Shortbread

    Ingredients

    • 1 cup butter
    • 1/4 cup white sugar
    • 2 cups all-purpose flour
    • 1 can sweetened condensed milk
    • 1 1/2 cups coconut
    • 2/3 cups glazed cherries
    • 1/3 cup chopped nuts
    • 1/4 cup raisins

    Method

    • Preheat the oven to 350°F.
    • Line 9×13 pan with parchment paper.
    • Cream butter and sugar together.
    • Blend in flour until coarse crumbs form.
    • Press the dough into the bottom of the pan.
    • Bake for 20 minutes.
    • Combine remaining ingredients and spread over shortbread.
    • Return to oven and bake for another 30-35 minutes.
    • Remove from oven and let cool.
    • Cut into bars and serve.

  • Date Squares

    Ingredients

    Base/topping

    • 1 3/4 cups rolled oats
    • 1 1/2 cups all-purpose flour
    • 1 cup brown sugar
    • 3/4 cup butter
    • 1/4 teaspoon

    Filling

    • 2 cups dates
    • 1 cup water
    • 1/2 cup white sugar
    • 1 tablespoon lemon juice

    Method

    1. Preheat oven to 375°F.
    2. Line 9×9 pan with parchment paper.
    3. Mix together filling ingredients in a saucepan
    4. Simmer over medium-low heat until thick.
    5. Let filling cool.
    6. Mix together base ingredients.
    7. Press half of the base mixture into the bottom of the pan.
    8. Cover with filling.
    9. Top with remaining base mixture.
    10. Bake in oven until done.

  • Triple Chocolate Cakey Brownies

    Ingredients

    • 1 cup unsalted butter, melted
    • 2 1/4 cups white sugar
    • 1 1/4 cups cocoa powder
    • 1 teaspoon salt
    • 1 teaspoon baking powder
    • 1 tablespoon vanilla extract
    • 1 teaspoon espresso powder
    • 5 large eggs
    • 1/2 cup water
    • 1 1/2 cups all-purpose flour
    • 2 cups chocolate chips

    Method

    1. Preheat oven to 350°F.
    2. Line a 9×13 pan with parchment paper.
    3. Combine the melted butter with the sugar, stirring until smooth.
    4. Stir in the cocoa, salt, baking powder, vanilla, and espresso powder.
    5. Beat in the eggs one at a time.
    6. Scrape the bowl.
    7. Add the water then stir until smooth.
    8. Add the flour and chocolate chips, stirring until combined.
    9. Spoon the batter into the pan.
    10. Bake until centre is set and a toothpick inserted in the centre comes out clean (about 30 minutes).
    11. Remove from oven and allow to cool.
    12. Ice with fudge frosting.

  • Brownies

    Ingredients

    • 2 cups white sugar
    • 1 1/4 cups shortening
    • 4 eggs
    • 2 cups all purpose flour
    • 1 teaspoon salt
    • 10 tablespoons cocoa powder
    • 1 cup chopped walnuts

    Method

    1. Preheat oven to 325°F.
    2. Line an 11 1/2×15 baking pan with parchment paper.
    3. Cream together sugar and shortening.
    4. Beat in eggs.
    5. In a separate bowl, mix together dry ingredients.
    6. Mix dry ingredients into shortening mixture.
    7. Fold in nuts.
    8. Spread batter out in bottom of pan.
    9. Bake until done (about 30 minutes).
    10. Remove from oven and let cool.
    11. Ice with fudge frosting, if desired.
    12. Cut into squares.

  • Rice Krispies Squares

    Ingredients

    • 1/4 cup butter
    • 5 cups miniature marshmallows
    • 1/2 teaspoon vanilla
    • 6 cups Kellogg’s Rice Krispies cereal

    Method

    1. Line 9×13 cake pan with parchment paper.
    2. In large saucepan over low heat, melt butter.
    3. Stir marshmallows into butter.
    4. Continue stirring until marshmallows melt and blend into butter.
    5. Remove from heat.
    6. Stir in vanilla.
    7. Stir in Rice Krispies.
    8. Press into cake pan with a spatula.
    9. Let cool.
    10. Remove from pan and cut into squares.
