  • Pesto

    Ingredients

    • 1/2 cup basil leaves removed from stems
    • 1 clove garlic
    • 6 tablespoons pine nuts lightly toasted
    • 1/2 cup olive oil
    • 1/4 cup parmesan finely grated
    • salt

    Method

    1. Crush basil, garlic, and nuts.
    2. Stir in oil, cheese, and salt.
    3. Use immediately, do not heat, just stir into cooked, drained pasta.

  • Marshmallows

    Ingredients

    • 4 tablespoons gelatine
    • 1/2 cup cold water
    • pinch salt
    • 1 cup boiling water
    • 3 cups white sugar
    • 1 1/2 teaspoons vanilla

    Method

    1. Line a 9×12 pan with parchment paper.
    2. Soak gelatine in 1/2 cup cold water with pinch of salt.
    3. In a saucepan, boil 1 cup water.
    4. Add sugar and stir until dissolved.
    5. Pour gelatine into boiling sugar water and dissolve.
    6. Add vanilla.
    7. Pour mixture into a large bowl.
    8. Beat until stiff.
    9. Pour mixture into pan.
    10. Refrigerate until set.
    11. Cut into squares.

  • Turkey Bacon Burgers

    Ingredients

    • 1 clove garlic
    • 4 ounces raw bacon
    • 2 pounds ground turkey
    • 1 medium onion chopped
    • 1 1/2 teaspoons salt
    • 3/4 teaspoon blak pepper

    Method

    1. Finely chop garlic and bacon together in a food processor.
    2. Mix garlic and bacon, onion, salt, and pepper into ground turkey by hand.
    3. Form into 8 patties.
    4. Grill until cooked through (about 8 to 10 minutes).
    5. Serve on toasted buns with desired toppings.

  • Fried Plantains

    Ingredients

    • 2 green plantains
    • 1 teaspoon salt
    • vegetable oil

    Method

    1. Peel the plantains.
    2. Cut into 1 inch thick circular slices.
    3. Pour half an inch of oil into a heavy frying pan and heat until oil is very hot.
    4. Fry the plantain slices until golden.
    5. On a chopping board, gently flatten the plantain slices with the bottom of a bottle.
    6. Refry the flattened plantain slices until crisp and golden brown.
    7. Remove from oil and pat dry with paper towel.
    8. Sprinkle with salt and serve hot with refried beans or guacamole.

  • Refried Beans

    Ingredients

    • 2 cups cooked black beans
    • 1 cup liquid retained from cooking black beans
    • 1 teaspoon mustard
    • 1 teaspoon olive oil
    • 1 teaspoon white sugar
    • tabasco sauce

    Method

    1. Put the beans and liquid in a blender and puree until smooth.
    2. Add all other ingredients while blending.
    3. Pour the mixture into a large nonstick pan and simmer over low heat, stirring constantly.
    4. Serve hot refried beans in a bowl topped with grated mild white cheese.
