  • Watermelon Feta Mint Salad

     Ingredients

    • 8 pound whole seedless watermelon, cubed, drained, and chilled (about 12 cups)
    • 1 cup fresh mint leaves, chopped
    • 1 1/2 cups feta cheese, crumbled
    • 1/4 cup olive oil
    • 3 whole limes, juiced
    • 1 1/2 teaspoons salt
    • 3/4 teaspoon black pepper

    Method

    1. Prepare just before serving.
    2. Put watermelon, mint, and feta in a large salad bowl.
    3. Whisk together oil, lime juice, salt, and pepper.
    4. Pour dressing over the salad.
    5. Gently toss and serve.

            1. Philly Cheese Portobello Sandwiches

               Ingredients

              • 2 teaspoons vegetable oil
              • 1 medium onion, thinly sliced
              • 4 large portobello mushrooms, stems and gills removed, thinly sliced
              • 1 large bell pepper, thinly sliced
              • 2 teaspoons dried oregano
              • 1/2 teaspoon freshly ground pepper
              • 1 tablespoon all-purpose flour
              • 1/4 cup vegetable broth
              • 1 tablespoon soy sauce
              • 1/4 cup provolone cheese, thinly sliced or grated
              • 4 vienna buns, split and lightly toasted

              Method

              1. Heat oil in a skillet over medium-high heat.
              2. Add onion and cook until soft and beginning to brown.
              3. Add mushrooms, bell pepper, oregano, and pepper and cook while stirring until vegetables are soft (about 7 minutes).
              4. Reduce heat to low.
              5. Sprinkle flour over vegetables and stir to coat.
              6. Stir in broth and soy sauce.
              7. Bring to a simmer.
              8. Remove from heat.
              9. Lay cheese on top of vegetables, cover and let stand until melted (1 to 2 minutes).
              10. Divide mixture into 4 with a spatula, leaving melted cheese on top.
              11. Scoop portions onto toasted buns and serve immediately.

                      1. Cheese Buns

                         Ingredients

                        • 1/2 cup warm water
                        • 1 tablespoon dry yeast
                        • 1/4 cup white sugar
                        • 1 cup milk, warmed
                        • 2 eggs
                        • 5 cups all-purpose flour
                        • 1/2 cup butter, at room temperature
                        • 1 teaspoon salt
                        • 2 cups old cheddar, shredded
                        • 1/3 cup parmesan, grated

                        Pizza Bun Variation

                        When adding the filling in step 8, spread 1/2 cup tomato sauce on rolled out dough before adding cheese, substitute feta for parmesan, and sprinkle on any other desired fillings.

                        Method

                        1. In the bowl of a stand mixer fitted with a dough hook, add the water, sugar, and yeast and let stand for about 5 minutes.
                        2. Add the warm milk and eggs to the yeast mixture.
                        3. Add 3 cups flour and mix until sticky.
                        4. Add butter, salt, and remaining flour and mix until a smooth, elastic dough forms (about 8 minutes).
                        5. Cover and let rise until doubled (about an hour).
                        6. Give the dough a few folds.
                        7. Roll out into a long rectangle on a lightly-floured surface so that it is about 1/4-inch thick.
                        8. Scatter cheese on top.
                        9. Starting on a long side, roll the dough up into a log.
                        10. Cut cross-wise into nine pieces.
                        11. Line a baking sheet with parchment paper.
                        12. Put the pieces on the baking sheet and cover with a damp tea towel to rise for about an hour.
                        13. Preheat the oven to 350°F.
                        14. Bake until buns are a deep golden colour (about 30-40 minutes).

                                1. Raspberry Ricotta Cake

                                   Ingredients

                                  • 1 1/2 cups all-purpose flour
                                  • 1 cup white sugar
                                  • 2 teaspoons baking powder
                                  • 3/4 teaspoon salt
                                  • 3 large eggs
                                  • 1 1/2 cups ricotta
                                  • 1/2 teaspoon vanilla extract
                                  • 1/2 cup unsalted butter, melted
                                  • 1 cup frozen raspberries

                                  Method

                                  1. Preheat the oven to 350°F.
                                  2. Lightly grease a 9″ spring form pan.
                                  3. Combine flour, sugar, baking powder, and salt in a bowl.
                                  4. In a stand mixer with whisk attachment, whisk together eggs, ricotta, and vanilla until light and smooth.
                                  5. Gently fold dry ingredients into wet.
                                  6. Gently fold butter into batter.
                                  7. Gently fold 3/4 of the berries into batter.
                                  8. Pour batter into pan.
                                  9. Sprinkle remaining berries over top.
                                  10. Bake until cake is golden and a toothpick inserted in the centre comes out clean (about 60-70 minutes).
                                  11. Let cool in pan
                                  12. Run a knife between the sides of the cake and the pan then take the cake out of the pan.

                                          1. Basic Pudding

                                             Ingredients

                                            • 2 cups milk
                                            • 1/2 cup white sugar
                                            • 4 tablespoons corn starch
                                            • 1/4 teaspoon salt
                                            • 1 teaspoon vanilla extract
                                            • 1 tablespoon butter

                                            Butterscotch Variation

                                            Substitute brown sugar for white sugar.

                                            Chocolate Variation

                                            Add 3 tablespoons cocoa powder to the dry ingredients in step 2.

                                            Pumpkin Spice Variation

                                            Add the following to the dry ingredients during step 2:
                                            • 1 teaspoon cinnamon
                                            • 1 teaspoon ginger
                                            • 1/4 teaspoon cardamom
                                            • 1/4 teaspoon cloves
                                            • 1/4 teaspoon nutmeg

                                            Method

                                            1. Heat milk in a saucepan over medium heat until bubbles form at edges.
                                            2. In a separate bowl, combine dry ingredients.
                                            3. While stirring, pour dry ingredients into milk a little at a time.
                                            4. Continue cooking and stirring until pudding thickens (do not boil!).
                                            5. Remove from heat.
                                            6. Stir in vanilla and butter.
                                            7. Pour into serving dishes.
                                            8. Chill and allow to set for at least 2 hours before serving.
