  • Date Squares

    Ingredients

    Base/topping

    • 1 3/4 cups rolled oats
    • 1 1/2 cups all-purpose flour
    • 1 cup brown sugar
    • 3/4 cup butter
    • 1/4 teaspoon

    Filling

    • 2 cups dates
    • 1 cup water
    • 1/2 cup white sugar
    • 1 tablespoon lemon juice

    Method

    1. Preheat oven to 375°F.
    2. Line 9×9 pan with parchment paper.
    3. Mix together filling ingredients in a saucepan
    4. Simmer over medium-low heat until thick.
    5. Let filling cool.
    6. Mix together base ingredients.
    7. Press half of the base mixture into the bottom of the pan.
    8. Cover with filling.
    9. Top with remaining base mixture.
    10. Bake in oven until done.

  • Barb’s Cookies

    Ingredients

    • 1 cup butter
    • 1 cup white sugar
    • 1 cup brown sugar
    • 2 eggs
    • 1 teaspoon vanilla
    • 2 cups all-purpose flour
    • 1 cup rolled oats
    • 1 cup corn flakes
    • 1 teaspoon baking powder
    • 1 teaspoon baking soda
    • 1/2 teaspoon salt
    • 1 cup chocolate chips
    • 1/2 cup pecans
    • 1/2 cup coconut

    Method

    1. Preheat the oven to 350°F.
    2. Line cookie sheets with parchment paper.
    3. Cream together butter and sugars in a stand mixer with paddle attachment.
    4. Beat in eggs and vanilla.
    5. In a separate bowl, mix together the dry ingredients.
    6. Add the dry ingredients to the butter mixture and stir until just combined.
    7. Mix in the chocolate chips, pecan, and coconut.
    8. Drop cookies onto pans.
    9. Bake until bottoms of cookies turn golden brown (about 12-15 minutes).
    10. Remove from oven, allow to cool for a few minutes, then move cookies to a wire rack to cool completely.

    Ingredients

    • 1/4 cup butter
    • 1 egg
    • 1/2 teaspoon vanilla
    • 1 cup all-purpose flour
    • 1 cup oatmeal
    • 3/4 cup coconut
    • 1/2 teaspoon baking powder
    • 1/4 teaspoon salt

    Method

  • Yellow Angel Food Cake

    Ingredients

    • 10 egg yolks
    • 1 whole egg
    • 1 1/3 cups white sugar
    • 1/3 cup water
    • 1 tablespoon orange juice
    • 1 teaspoon grated orange rind
    • 1 teaspoon vanilla extract
    • 1 1/2 cups cake flour
    • 1 teaspoon baking powder
    • 1/2 teaspoon salt

    Method

    1. Preheat oven to 325°F.
    2. Grease and flour a 10″ tube pan.
    3. Beat egg yolks and whole egg until thick and lemon coloured.
    4. Gradually beat sugar into eggs.
    5. Combine water, juice, rind, and vanilla and add to egg mixture.
    6. Beat for 5 minutes.
    7. Sift together flour, baking powder, and salt.
    8. Fold dry ingredients into egg mixture.
    9. Pour into pan.
    10. Bake until done (60 to 65 minutes).
    11. Invert pan and allow to cool.

  • German Coffee Cake

    Ingredients

    • 2 cups all-purpose flour
    • 3/4 cup white sugar
    • 4 teaspoons baking powder
    • 1 teaspoon salt
    • 1/4 teaspoon nutmeg
    • 1/4 teaspoon cinnamon
    • 1/4 cup butter
    • 2 eggs
    • 1 cup milk
    • 1 cup brown sugar
    • 1 tablespoon all-purpose flour
    • 1/4 cup butter
    • 1/2 teaspoon cinnamon
    • 1/8 teaspoon salt
    • 1 cup nuts

    Method

    1. Preheat oven to 350°F.
    2. Line 9×9 pan with parchment paper.
    3. Mix together dry ingredients.
    4. Blend in butter.
    5. Stir in eggs and milk, stir until smooth.
    6. Pour batter into pan.
    7. Mix together sugar, flour, butter, cinnamon, and salt until crumbs form.
    8. Top batter with crumbs and nuts.
    9. Bake until a toothpick inserted in the centre comes out clean (about 30 minutes).
