  • Cheesy Garlic Zucchini Bites

    Ingredients

    • 2 cups shredded zucchini, patted dry (about 2 medium zucchini)
    • 1 1/4 cup plain panko bread crumbs
    • 1 cup shredded cheddar cheese
    • 1 large egg
    • 1/2 cup green onion, finely chopped
    • 2 tablespoons chopped dill
    • 1 teaspoon salt
    • 1 teaspoon garlic powder

    Method

    1. Preheat oven to 400°F.
    2. Line a pan with parchment paper.
    3. Mix together all ingredients in a large bowl.
    4. Drop mixture onto pan one tablespoon at a time in small balls.
    5. Bake until browned and crisp, flipping halfway through (about 30 minutes).
    6. Serve while warm.

  • Raspberry Muffins

    Ingredients

    • 1/3 cup unsalted butter
    • 1 cup white sugar
    • 2 eggs
    • 1/4 cup 0% greek yogurt
    • 1/4 cup water
    • 1 teaspoon vanilla extract
    • 1 3/4 cups all-purpose flour
    • 2 teaspoons baking powder
    • 2 cups raspberries

    Method

    1. Preheat oven to 375°F.
    2. Line a muffin pan.
    3. Cream together butter and sugar in a stand mixer with paddle attachment.
    4. Beat in the eggs.
    5. Stir in the yogurt, water, and vanilla.
    6. In a separate bowl, stir together flour and baking powder.
    7. Toss raspberries in the dry ingredients until coated.
    8. Gently stir dry ingredients and fruit into the wet ingredients.
    9. Drop batter into muffin pans.
    10. Bake until the tops are dry to the touch and a toothpick inserted in the centre of a muffin comes out clean (about 20-25 minutes).

    Ingredients

    • 1/2 cup butter
    • 3/4 cup white sugar

    • 3/4 cup blueberries
    • 3/4 cup chopped apples with peels

    Method

    1. Preheat oven to 400°F.
    2. Line a muffin pan.

    Ingredients

    • 1/3 cup unsalted butter
    • 3/4 cup brown sugar
    • 1 egg
    • 1/2 cup molasses
    • 2 teaspoons vanilla
    • 1 teaspoon lemon juice
    • 3 cups all-purpose flour
    • 1 1/2 teaspoons baking powder
    • 3/4 teaspoon baking soda
    • 1/4 teaspoon salt
    • 1 tablespoon ground ginger
    • 1 3/4 teaspoons ground cinnamon
    • 1/4 teaspoon ground cloves

    Method

    1. Cream butter, sugar, and egg together in a stand mixer with paddle attachment.
    2. Add molasses, vanilla, and lemon and mix until well blended.
    3. In a separate bowl, mix together the dry ingredients.
    4. Add the dry ingredients to the butter mixture, and stir until well blended.
    5. Wrap dough in plastic wrap and refrigerate for at least 2 hours.
    6. Preheat the oven to 375°F.
    7. Line cookie sheets with parchment paper.
    8. Roll dough out on lightly floured surface until 1/4 inch thick.
    9. Cut cookies out and put on pan.
    10. Bake one pan at a time until bottoms begin to brown (7-10 minutes, longer is crispier).
    11. Remove from oven and cool cookies on a wire rack.

    Ingredients

    • 1/4 cup vegetable oil
    • 3/4 cup 0% greek yogurt
    • 1/2 cup 0% milk
    • 1/2 cup brown sugar
    • 1/2 cup molasses
    • 1 egg
    • 2 1/2 cups all-purpose flour
    • 1 1/2 teaspoons baking soda
    • 1 1/2 teaspoons ground ginger
    • 1 1/2 teaspoons ground cinnamon
    • 1/2 teaspoon salt
    • 1/4 teaspoon ground cloves
    • 1 1/2 cups finely diced sweet apples, skin on

    Method

    1. Preheat oven to 375°F.
    2. Line a muffin pan.
    3. In stand mixer with whisk attachment, mix together oil, yogurt, milk, sugar, molasses, and egg.
    4. In a separate bowl, stir together flour and spices.
    5. Add apples to dry ingredients and stir until apple pieces are coated.
    6. Add wet ingredients to dry ingredients and stir gently until just combined.
    7. Drop batter into muffin pans.
    8. Bake until the tops are dry to the touch and a toothpick inserted in the centre of a muffin comes out clean (about 16 to 18 minutes).
