  • Butter Horns

    Ingredients

    • 4 1/2 teaspoons dry yeast
    • 1/2 cup water
    • 1 1/2 cups milk
    • 1/2 cup white sugar
    • 1 teaspoon salt
    • 1/2 cup shortening
    • 2 eggs
    • 5 1/2 cups all-purpose flour
    • 3 tablespoons butter, melted

    Glaze

    • 3/4 cup icing sugar
    • 1 teaspoon vanilla
    • water
    • nuts

    Method

    1. Line a baking sheet with parchment paper.
    2. Activate yeast in water.
    3. In a saucepan over medium heat, heat up the milk, shortening, and sugar until the sugar is dissolved and the shortening is melted.
    4. Allow the milk mixture to cool.
    5. Beat together the yeast, milk mixture, and eggs.
    6. Gradually add in flour.
    7. Cover and let rise until doubled.
    8. Punch down, let rise until doubled again.
    9. Roll out the dough into a rectangle on a lightly floured surface.
    10. Brush top of dough with melted butter.
    11. Roll the dough, then cut.
    12. Put horns on pan, cover, and let rise again.
    13. Preheat oven to 375°F.
    14. Bake until golden brown (about 25 minutes).
    15. Let cool.
    16. Mix together glaze, and glaze the top of the butterhorns.
    17. While glaze is wet, top with nuts.

  • Sour Cream Scones

    Ingredients

    • 1 egg
    • 3/4 cup sour cream
    • 2 cups all-purpose flour
    • 2 teaspoons baking powder
    • 3/4 teaspoon baking soda
    • 1/2 teaspoon salt
    • 1/3 cup white sugar

    Method

    1. Preheat oven to 425°F.
    2. Line a baking sheet with parchment paper.
    3. Beat egg, add sour cream and continue beating.
    4. Stir together the rest of the ingredients.
    5. Mix together the dry and wet ingredients.
    6. Drop onto baking sheet.
    7. Bake until done (about 15 minutes).

  • Lemon Bread

    Ingredients

    • 1/2 cup shortening
    • 1 cup white sugar
    • 2 eggs
    • grated rind of 1 lemon
    • 1/2 cup milk
    • 1 1/2 cups flour
    • 1 teaspoon baking powder
    • 1/4 cup white sugar
    • juice of 1 lemon

    Method

    1. Preheat oven to 350°F.
    2. Grease a loaf pan.
    3. Cream together shortening, white sugar, and eggs in a stand mixer with paddle attachment.
    4. Mix in lemon rind and milk.
    5. Mix in flour and baking powder.
    6. Pour batter into pan.
    7. Bake until a toothpick inserted in the centre comes out clean (about 45 minutes).
    8. Mix together sugar and lemon juice, then spoon over hot bread just as it comes out of the oven.
    9. Allow bread to cool, then remove from pan.

  • Buttermilk Coffee Cake

    Ingredients

    • 1 1/2 cups all-purpose flour
    • 1/3 cup white sugar
    • 1/2 cup brown sugar
    • 1 tablespoon cinnamon
    • 1/2 teaspoon ginger
    • 3/8 cup butter
    • 1/2 cup pecan pieces
    • 1 egg
    • 2/3 cup buttermilk
    • 1/2 teaspoon baking soda
    • 1/2 teaspoon baking powder
    • 1/2 teaspoon salt

    Method

    1. Preheat oven to  350°F.
    2. Line a 9×9 pan with parchment paper.
    3. Stir together the flour, sugars, and spices.
    4. Cut the butter into the flour mixture.
    5. Remove 2/3 cup of the flour mixture and set aside.
    6. Stir pecans in to main mixture.
    7. Beat eggs in, while beating, gradually add buttermilk.
    8. Continue beating the batter until it is light and smooth.
    9. Stir in baking powder and baking soda.
    10. Pour into pan.
    11. Top with 2/3 cup crumb mixture.
    12. Bake until a toothpick inserted in the centre comes out clean (about 25 minutes, careful: will fall easily).

  • Orange Bread

    Ingredients

    • 2 orange rinds
    • 1 cup cold water
    • 1 cup white sugar
    • 1/2 cup cold water
    • 1 tablespoon butter
    • 1 egg
    • 2 cups flour
    • 3 teaspoons baking powder
    • pinch salt
    • walnuts (optional)

    Method

    1. Preheat oven to  350°F.
    2. Grease a loaf pan.
    3. Cut orange rinds up with scissors until they are very fine.
    4. Put rinds and 1 cup water in a saucepan and bring to a boil, let boil 10 minutes.
    5. Add sugar and remaining water to saucepan, bring to a boil, then let cool.
    6. Mix butter and egg into juice.
    7. Mix in flour, baking powder, and salt, and mix until combined (add walnuts if desired).
    8. Pour batter into loaf pan.
    9. Bake until toothpick inserted in centre comes out clean (about 1 hour).
